The municipality of Vallefiorita is not very large, only 9 square kilometers, but this makes it all the more relevant that certain of its oil farms are among the most highly regarded nationwide. As it happens with wine, where each territory has its own characteristic grape, so it is with oil, which specifically in the province of Catanzaro bases its typicality on theCarolea olive, otherwise known as Calabrese because of its strong identity with this land. Its presence has been documented since the 8th century, but it is more than likely that this olive tree is a legacy of Magna Graecia.

A beautiful tree, vigorous, characteristic for its assurgent bearing, with thick and compact foliage. A particular variety, resistant to both cold and drought, characteristics that allow its presence even on arid mountain ranges up to about 800 meters above sea level, benefiting, specifically in the Calabrian Serre, from the climatic contrasts determined by the proximity of sea and mountains.

Today that oil is processed in purity, that is, from a single variety, an unmistakable product is obtained, well known among experts: golden-yellow color with beautiful greenish veins; medium fruity aroma, with hints of apple, almond and artichoke; pleasantly spicy and herbaceous flavor. Results, which are achieved through meticulous processing, starting with the harvesting of the olives, 'grazed' manually from the branch, when the color transitions from green to black, and sent to the mill without delay. A long history, which every day finds its seal in the ritual of a round of oil on the plate.
