Sogliano PDO Pit Cheese Fair
An appointment with the typical taste and flavors of Sogliano al Rubicone
In a nutshell
The event takes place among the streets of the historic center of the village. During the three Sundays of the festival, visitors can taste "Formaggio di Fossa di Sogliano al Rubicone," a cheese with a strong flavor and rich herbaceous scents, which was awarded the DOP mark in 2009.
The days are enlivened by concerts, theatrical and musical performances, but above all wine and cheese tastings. On this occasion, as for the rest of the year, it is possible to visit the pits present in the historic center and buy "Formaggio di Fossa di Sogliano DOP" directly "in the pit," but also other typical products of the Sogliano area, such as "savor" and "saba" and the clay pans of Montetiffi, used for cooking piadina.
The most fascinating event takes place on November 25, the day of St. Catherine of Alexandria, when following an ancient tradition of the village, the opening of the pits, used for aging cheese, takes place. These are flask-shaped pits, dug into the sandstone rock and as much as three meters deep. A tradition widespread in the Middle Ages that gives an unmistakable flavor to the cheese of Sogliano al Rubicone.
